TL;DR
Easiest option is to buy an eSIM in advance online (around 150-250 RUB / a few dollars) and activate a data package via a Telegram bot once you land in Turkey — fast and no need to visit a local phone shop.
An eSIM with 30GB for 15 days cost just over 700 RUB (~$8) — cheaper than a comparable local carrier plan (10GB for the same price). Coverage was excellent throughout Antalya.
Bought an eSIM online for about 160 RUB (~$2), set it up via a Telegram bot at home before the flight following the step-by-step instructions. On arrival just turned it on and it worked instantly with good speed. Chose the smallest data package since the hotel had wi-fi everywhere.
eSIM bought online: the SIM itself cost around 250 RUB (~$3), topping up with a data package cost another ~350 RUB (~$4). Internet worked everywhere around town.
