TL;DR
The lobby bar is the better choice: drinks are served in proper glassware and are noticeably cleaner. Pool bars use plastic cups that can be dirty and poorly maintained.

Beach bar offerings vary a lot by hotel: some have no alcohol at all (maybe just beer), only a water cooler, machine 'juices' and non-alcoholic cocktails. An alcoholic cocktail class happened only once, as a promo for leaving a review.

The pool bar was a letdown: plastic cups were visibly dirty and worn. Dried leaves from a previous cocktail were found in one cup, after which the pool bar was avoided entirely. Beach drinks came in paper cups — not glamorous, but at least clean.
