TL;DR
Şile on the Black Sea is the best option for actual swimming. The Princes Islands are great for a scenic ferry ride and walk, not for beaches. Florya and Caddebostan are convenient city beaches if you're short on time.
For a day trip from Istanbul focused on swimming, Şile on the Black Sea coast is the top pick. The water and beach quality there is noticeably better than on the Marmara Sea side.
A trip to the Princes Islands is worth it mainly for the ferry ride and exploring the island on foot, not for beach swimming. If the goal is actually getting in the water, Şile is the better choice.
Florya and Caddebostan are city beaches within Istanbul itself — convenient if you don't want to spend a full day travelling, but the water and beach quality are lower than at Şile.
For a proper beach holiday rather than a day trip, Turkey's Mediterranean coast is a much better option — Marmaris, Fethiye, Kaş, or Kemer all offer significantly better sea and beach conditions.
