TL;DR
Amian beach near Nha Trang has crystal-clear water with fish visible in shallow areas. Boat fishing trips are also available for those who want to get further out to sea.
A recommended snorkeling area is the northern part of Nha Trang near the Stone Garden rocks: people look for fish behind the rocks there. It is not an instant shore-entry spot — you usually need to swim around and search, and fish are not guaranteed every day.
Hon Tam is reported to have fish and crabs visible near the beach. The smaller beach on the left is the better choice: cleaner water, fewer people, and usually more marine life. The larger beach on the right was rated worse because of a dirty seabed.
Amian beach has exceptionally clear water right at the shore — fish are visible in knee-deep water, making it ideal for snorkeling without swimming far out.
The main Nha Trang city beach is murky near the shore up to the buoy line, and swimming beyond the buoys is not allowed (lifeguards whistle). Better to head to cleaner spots for snorkeling.
Boat fishing trips are available and popular — you get a sea cruise, can dive, but don't count on a big catch. Good for a relaxed day on the water.
Lake fishing in a local park is a relaxed alternative — catfish and even piranha have been caught. One catfish was cooked on-site and was reportedly delicious.
